Vegan Mac & Cheese

You will need:

  • raw cashews

  • carrots

  • potatoes

  • olive oil

  • nutritional yeast

  • lemon

  • garlic cloves

  • dijon mustard

  • white wine vinegar

  • cayenne pepper

  • macaroni

  • panko breadcrumbs

Preparation:


  1. The night before, soak the cashew nuts in water and leave them overnight.

  2. Preheat the oven to 180C with a fan. Cook the carrots and potatoes together for 5 minutes until completely soft.

  3. Grind with a blender or food processor.

  4. Drain the cashews and add with 60 ml oil, then blend to break up the nuts.

  5. Add the remaining ingredients except the pasta, breadcrumbs and remaining oil and blend again until smooth and well combined.

  6. Add a little water and a little olive oil if the mixture seems too hard and cool.

  7. Cook the pasta in a large saucepan in salted water for 1 min. less than the time indicated on the package, then drain and stir into the sauce.

  8. Transfer the mixture to an ovenproof dish, mix the breadcrumbs with the remaining oil and a little seasoning.

  9. Coat the pasta and bake for 20-25 minutes until hot and crisp.
